I have had an interesting last couple weeks.  I stepped on a pin (from a pair of pants I had altered) and half of it broke off in my foot.  Long story short, I had to have orthopedic surgery and am just getting back to things now.  Who would have thought that something so small could cause so much trouble?  Anyways, I’m back in the kitchen now and am excited to share this fresh, and very healthy summer recipe with you.  I typically like to marinade my fish, or crust it in Panko, but that seemed a little too heavy for the warm weather.  I’ve enjoyed many a crab cake with mango salsa, but wanted to switch things up and try using another tropical fruit for a change.  Alas, this delicious recipe for fish with a kiwi salsa was created.  I used Zespri SunGold Kiwis, which are sweet and much easier to handle than your typical green kiwi (they don’t have fuzzy skin).  Did you know that a serving of kiwi has three times more vitamin C than an orange and as much potassium as a banana?  Give this recipe a try for a nutrient-packed, tasty summer meal.

Green Goddess Bowls

Green Goddess Bowls by Eating with a Purpose A week into his residency, I asked Doug what he felt like eating for dinner- his reply, “something fresh and healthy”.  While cooking is something I do for pleasure, I do like a little inspiration when deciding what to prepare.  Doug’s response was pretty typical.  I do love that he doesn’t fit the stereotype of your typical meat and potatoes loving kind of guy, but he isn’t the greatest at coming up with meal ideas (sorry Doug).  What came to my mind when I thought “fresh and healthy” was the color green- hence, the inspiration for these delicious bowls.  Perhaps they’ll make any appearance again on St. Patty’s day?  Anyways, we were both pretty pleased with the result.  We may have put the sauce on just about everything this week…

What I Ate This Week: June 26-July 2

Happy belated Canada Day and 4th of July!  I hope everyone enjoyed this long weekend.  We were able to catch a Mariners game in between Doug’s shifts and tried one of the many great restaurants in Seattle.  I tried a couple new recipes this week, and was very pleased with both.  I have yet to try a dish from the Foodie Physician that I don’t love- her Savory Naan Bread Pudding was no exception.  I also made one of my go-to dishes from Pinch of Yum, Thai Sweet Potato Curry.  Enjoy the 4th!

What I Ate This Week: June 19-25

I think this week was the first in a long time that I felt there was routine in my life.  It’s amazing how much I missed my routine over the past three months- I have really come to value it.  I love my new job and am starting to become more familiar with the Seattle area.  Routine for me also means doing some form of cooking each week rather than just grabbing food on the go.  Aside from trying Meme’s delicious taco soup last week, I found myself resorting to some of my favorite go-to dishes that I’ve made many times.  If you haven’t noticed already, I’ve become a huge fan of the blog Pinch of Yum.  I love that Lindsey’s dishes spotlight veggies and are quite straightforward to prepare.  Give her One-Pot Creamy Spinach Lentils a try!  I’ll be sure to try something new next week to share with you.

Taco Soup

Wow… a lot has happened over the past three months- we did 2 cross country road trips to the West Coast from NOLA, got married, went to Europe for our honeymoon and are now settling into our new place in Seattle. Oh, and I start a new job tomorrow!  Needless to say, it’s been a whirlwind.  I hope that somewhat justifies why my posts have been somewhat far and few between.  As I settle into our new home, I hope to start posting more frequently again, but I hope you’ll be patient as I start my new job 🙂  Last night I prepared our 2nd meal here, and it was so yummy.  This month’s Recipe Redux theme was “Celebrate a Reduxer,” meaning prepare a dish you love from another member of the Recipe Redux blogging group.  I wanted to celebrate my good friend Meme, who also happens to be another RD blogger.  I made her flavorful Taco Soup, which will be perfect this week for dinner as I anticipate my time in the evenings will be somewhat limited!  I had to stop Doug from eating the whole pot before it was done simmering…

Our European Adventure- Rome

2 Days in Rome by Eating with a Purpose

Rome stood out for its unbelievable historical sites and unique food scene.  Our days were spent exploring the city and touring the Colosseum and Vatican.  At night, we enjoyed some fabulous restaurants and- believe it or not- craft beer.  I was very lucky that Doug did his research prior and chose accommodation in the area known for its food and culture, Trastevere.  While I’ll admit that history was never my passion in school, I loved delving into the past on our tours throughout the city.   Both of us were happy with the amount of time we spent in Rome (2 nights), as we were able to see many sights without getting “maxed out” on museums.  Rome was also the most expensive of all the cities we visited in Italy.

Our European Adventure- Tuscany

Traveling Tuscany by Eating with a Purpose

Sadly, Doug and I didn’t get to fully appreciate and explore Tuscany.  Our first day we awoke to beautiful weather and had a great day.  Unfortunately on our second day, both of us woke up not feeling well, and it was pouring rain.  Luckily we had an amazing first day and were able to enjoy plenty of food and wine.  The scenery was gorgeous, and renting a car was definitely the perfect way to see the countryside.  We found some valuable information on travel blogs, and I definitely want to direct you that way too!

Our European Adventure- Florence

Your Guide to Florence by Eating with a PurposeFlorence (aka Firenze) was my favorite city of the trip- I think this may have been due to the fact that food and cooking were the main focus of this stop.  Florentine cuisine does include some “serious” meat dishes, which Doug loved.  The pasta and veggie dishes were equally as fabulous.  The highlight for me of this destination, in fact of the whole trip, was the cooking class we took.  In addition to lots of food and cooking, Florence has some beautiful historic architecture and museums to explore.  I hope you enjoy my recommendations!

Our European Adventure- Cinque Terre

Travelling Cinque Terre by Eating with a Purpose         Hello again long lost friends!!!  Doug and I just returned from our “pre-wedding” honeymoon in Europe.  I know it sounds cliché, but we truly had the trip of a lifetime.  We started in Cinque Terre and traveled through Florence and Rome before flying to Greece and experiencing Nafplio, Athens and Santorini.  It was the perfect mix of relaxation and adventure.  Because Doug and I relied so much on suggestions from travel bloggers, I’ve decided to share our adventure with you through a series of posts.  I hope that I may make your planning a little easier should you ever plan a visit to one of these gorgeous locations.  Each post will feature links to our accommodation, activities and of course, favorite restaurants in each destination.  I’ll admit, because our location is in flux right now between New Orleans, Seattle and Vancouver, my recipe and nutrition posting will be somewhat limited (as it has been).  I assure you, these will be returning later in June once we are settled (and married!!!)

On Friday we received some exciting news- we will be moving to Seattle for Doug’s residency at University of Washington.  We are absolutely thrilled, as we were so hoping to be closer to family and friends.  Over the next three months, we will be traveling here there and everywhere prior to our wedding in June.  We depart for Europe at the end of the month and will be traveling throughout Italy and Greece for our pre-wedding honeymoon (residency starts shortly after our wedding).  I hope to find some time over the next couple months to share our adventure with you.  As you can imagine, our honeymoon is going to be heavily focused on food!   It’s kind of been a roller coaster ride the past couple weeks, so cooking has not been a priority.  Thankfully, this month’s Recipe Redux theme is all about keeping things simple.  We were challenged to create a recipe with 7 ingredients or less.  I’ve been meaning to share this amazing salmon recipe with you, and this was the perfect opportunity to do so.  While my Soy Maple Glazed Salmon is my go-to, this is another favorite.  It’s perfect for Spring and the start of grilling season!
