What I Ate this Week: July 19-25

I had a great weekend celebrating turning another year older- time is flying!  Doug joined me for a Barre 3 workout, we enjoyed brunch, did some boutique shopping and finished the night with a delicious dinner and cocktails at local spots.  I had been trying to get him to join me for a Barre 3 class, so he promised he’d come on my birthday.  He survived the class and actually really liked it.  We enjoyed more recipes from Plenty this past week- as you may have noticed- we love the cookbook.  Doug even tried making one- which turned out very well!

Sunday

  • Mushroom Lasagna (Plenty)– An interesting take on the classic.  If you are a mushroom lover (we are), you should probably try this dish.  I was amazed by the number of cheeses in it!  This is somewhat indulgent- just stick to an appropriate portion and pair with a green salad.

Monday

  • Repeat Mushroom Lasagna- This was one of those dishes that got even better as it sat.

Tuesday

Abundance Bowls with Almond Butter Lemon Dressing (Love and Zest)

Wednesday

  • Repeat Abundance Bowls- We just store all the prepared ingredients in containers and assemble for each portion.

Thursday

  • Eggplant with Buttermilk Sauce (Plenty)– The second Plenty feature of the week.  The dish had caught our attention as it is actually the cover photograph of the cookbook.  Doug called me on my way home from work as he had started making this dish and was missing a couple ingredients.  After two stops at different grocery stores, I could not find the exotic spices he needed.  We improvised, and it was still delicious.  After that, Doug promised to always read a recipe through before starting to make it 🙂

Lauren is a Registered Dietitian Nutritionist who finds relaxation amongst pots, pans and good ingredients. From an early age, Lauren grew up cooking alongside her mother, Angela. After finishing a Bachelor of Science degree, Lauren realized she wanted to integrate her love for food and cooking into her career and went back to school to become a Registered Dietitian.

After completing a primarily pediatric internship in Vancouver, Canada, Lauren’s personal life led her to the Southern United States. Lauren is now soaking up the cultural and culinary flavors of New Orleans in her time off from practicing in a local pediatric clinic. Lauren has a special interest for educating children and adolescents on not only eating healthy, but also learning the skills to prepare healthy food. Prior to becoming a dietitian, Lauren led a children’s after school cooking camp and continues to enjoy educating children and their parents in her current work setting.

  1. I need to try all of these! Sound so yummy – we’ve had some rain up here the past couple days and the warmer dishes might be just what the doctor ordered! I can also just picture Doug trying to pronounce the exotic spices over the phone…. lol! Happy birthday beautiful – glad you got spoiled 🙂 xo

  2. I LOVE Plenty!!! It always has the perfect recipes when I’m looking to entertain — not too difficult, but fancy enough to impress! I’ve tried the eggplant before and it’s amazing!!
