What I Ate this Week: November 23-29

Lauren CupcakesTo all my Yankee friends, I hope you had a wonderful Thanksgiving!  We joined our friends, Betsy & Jeff, at their house for the big event.  Betsy’s parents were in town from Portland, Oregon, which made it extra special.  Betsy, her Mom and I cooked for most of the day on Thursday.  The boys were busy fulfilling the other traditional thanksgiving duties of watching football and tasting seasonal craft beers while we prepared the feast.  I will be honest- they were essential in getting the bird in the oven and carving and “staging’ the meat (as Jeff put it).  I guess the long hours spent during their surgery rotations were worth it… Continue reading

Lauren is a Registered Dietitian Nutritionist who finds relaxation amongst pots, pans and good ingredients. From an early age, Lauren grew up cooking alongside her mother, Angela. After finishing a Bachelor of Science degree, Lauren realized she wanted to integrate her love for food and cooking into her career and went back to school to become a Registered Dietitian.

After completing a primarily pediatric internship in Vancouver, Canada, Lauren’s personal life led her to the Southern United States. Lauren is now soaking up the cultural and culinary flavors of New Orleans in her time off from practicing in a local pediatric clinic. Lauren has a special interest for educating children and adolescents on not only eating healthy, but also learning the skills to prepare healthy food. Prior to becoming a dietitian, Lauren led a children’s after school cooking camp and continues to enjoy educating children and their parents in her current work setting.

Mom’s “Canadian” Cranberry Sauce

Canadian Maple Cranberry SauceOne benefit of being a Canadian living in the US is being able to celebrate two thanksgivings each year. We hosted our 2nd annual Canadian Thanksgiving in early October, which is always a ton of fun. My favorite part is the outfits that our guests arrive in (typically full denim, aka Canadian tuxedos). We are very excited to join our good friends in celebrating their family’s American Thanksgiving on Thursday. They have planned quite a spread for Thursday, which I will be telling you about in the next post. In honor of the holiday, I wanted to share my Mom’s cranberry sauce recipe in advance, should you be looking for one for Thursday. Growing up, my Mom’s recipe was always requested at both Thanksgiving and Christmas get-togethers.  Check out the full recipe here. Continue reading
